You’re in for a real treat with today’s podcast guest! I’m speaking with Maggie Michalczyk, whose bright and joyful personality shines through even over Zoom. Maggie is a fellow Registered Dietitian, author of the recently released cookbook Once Upon a Pumpkin: 50 Creative Pumpkin Seasoned, Flavored, Shaped, & Spiced Recipes, and recipe developer specializing in millennial nutrition. Maggie loves sharing healthy, delicious recipes that inspire others to get in the kitchen and create something healthy and delicious.

During our chat, Maggie shared some interesting insight into her RD career path, the cookbook writing and publishing process, and what healthy living means to her. Here are some of my favorite takeaways from our conversation:

  • The RD career path affords one many opportunities to design their own path. For Maggie, recognizing the connection between feeling good and eating certain foods was key in helping her decide to explore the nutrition world professionally.
  • When you’re passionate about a project or endeavor, the universe takes notice and things start to come back full-circle in ways you didn’t expect.
  • Healthy living means looking within and doing what’s healthy for you based on what makes you feel good.
  • Pumpkin is super versatile and lends itself to so many delicious recipes!
